Dos Olivos Market opening in Dripping Springs in Summer 2022

Artisanal Food Market and Eatery Expands with Fourth Location Just Outside of Austin

Staff Reports

DRIPPING SPRINGS — Right off the heels of opening a third location in Harlingen in April 2022, Dos Olivos Market is excited to announce its fourth market and eatery opening this June in Dripping Springs. The market’s expansion is being celebrated with a grand opening event on Thursday, June 16, at 12680 W. US 290 Suite 110 in The Shops at Ledgestone.

Co-owned by father-daughter team Rafael and Rebecca Varela, Dos Olivos Market is an original marketplace where Old World tradition meets Texas charm. With an on-site retail shop, butchery, and counter-service eatery serving lunch and dinner daily, the marketplace features artisanal goods from Texas and Spain as well as local, national and international wine and beer selections; gourmet, seasonal dishes; beer flights and wine tastings; and more.

The grand opening of Dos Olivos Market’s Dripping Springs location will kick off at 11 a.m. with a Dripping Springs Chamber of Commerce ribbon-cutting ceremony. The full menu will be available to order from at the front counter, and the dining room will be seated on a first come, first served basis – no reservations needed!

In addition to live music from 12-2 p.m. and 5-8 p.m., there will also be olive oil samples from Alta Gama Foods, beer samples and new release features from Bear King Brewery, and new summer reds and sparkling rosé wine samples from BBR Imports. The Lockhart-based MAMO’s will also be on-site sampling garlic paste for guests to enjoy.

“We’ve had our family’s ranch in Dripping Springs since 2008, so this has been home for a while and we’ve always wanted to bring Dos Olivos Market to the area. We’re excited to finally be here and offer something unique and fun to the community!” says Rebecca Varela.

With an Old World vibe, Dos Olivos Market has something for everyone to love. The online and on-site retail market includes a collection of Dos Olivos Originals such as Al Pastor Marinade and Red Chili Pomegranate Salsa, Spanish food products found exclusively at Dos Olivos Market, plus a variety of olive oils and vinegars, jams and jellies, spices, dips, sweets, coffee and more.

The counter-service eatery and dining room also boast a menu of rotating wines and beers as well as chef-created dishes that change seasonally. The food menu features fan-favorite staples for brunch, lunch and dinner like the Truffle Mac n’ Cheese (with jamón and baby kale), Pan Tomate (served with jamón serrano, garlic-tomato emulsion, ciabatta) and Seared Seasonal Squash (with caramelized potato gnocchi, truffle marcona-thyme olive oil and chile-roasted onions).

Dos Olivos Market in Dripping Springs will be open seven days a week. Their hours are Sunday through Thursday from 11:30 a.m. to 9 p.m. and Friday through Saturday from 11:30 a.m. to 11 p.m.

The market symbolizes the Varela family’s ranch; its transition to the Dos Olivos Market name – which will be in full effect for all four locations by June 2022 – is a nod to the gift of two olive trees the family was given and signifies new beginnings for both the Varelas and the brand. Dos Olivos Market currently has locations in Wimberley and Buda as well as newcomers in Harlingen, which opened in April 2022, and Dripping Springs.
