Sweet Potato & Black Bean Hash

Cost Per Serving: $2.36 

Yields 4 Servings

 

Ingredients:

  • 4 Tbsp. olive oil
  • 3 cups diced sweet potatoes (about 2 large potatoes)
  • 1/2 large yellow onion, chopped
  • 1 red bell pepper, chopped
  • 1/2 Tbsp. paprika
  • 1 tsp. cumin
  • 2 cups fresh spinach
  • 1 can (15 oz.) black beans
  • Salt and pepper to taste

Optional toppings: avocado, fried egg

Optional lean meat protein to add: turkey bacon

 

Directions:

  1. Heat olive oil on medium in a large pan.
  2. Add sweet potatoes, onion, salt, pepper, paprika, and cumin. Cook for 10 minutes, stirring occasionally.
  3. Add spinach and cook for an additional five minutes.
  4. Add black beans and stir until all ingredients are well-blended.

Serve with eggs and avocado or on its own.
