Couch Family to ‘ELEVATE’ San Marcos Once Again

by, Chauntel Seminerio, Managing Editor

The ever enterprising Couch family is venturing forward once more, this time bringing a new ‘Elevation’ to San Marcos in the form of a one of a kind rooftop bar & table venue.

407 Stagecoach Trail, on the second floor, just above A Tan Asian Bistro and Sushi Bar, has been approved this past week by the Planning and Zoning Commission, to operate as Elevate Bar & Table, 4 to 11 p.m. Tuesday, Wednesday and Sunday weekly, with hours extended till 2 a.m. Thursday through Saturday.

In an exclusive sit down interview with Cody Couch, General Manager and visionary behind Cody’s Bistro & Bar, Corridor News asked “Why Elevate?”

Couch replied, “The name Elevate works all around, we will elevate the food, the music, the style, new cocktails, be elevated on our rooftop; a whole new experience.”

With an indoor fixed seating capacity of 45 seats, 43 outdoor fixed seats, and a total gross floor area of 2,060 sqft, the rooftop space will feature a 22ft long white blizzard designed quartz bar top, acting as a canvas for every handcrafted shot or cocktail presented to each guest. According to the site plan, there are 54 total on-site parking spaces with an additional 23 on street parking, for a total of 77 parking spaces to serve the building. Retractable awnings fitted with cooling misters, for Texas’ infamous days of sweltering heat, only scratch the surface of considerations taken into account by the Couchs’, ensuring guest’s comfort and contentment.

Elevates identity will be modern industrial with an open floor plan, exposed beams overhead, and stained concrete floors below. A lounge area, accented by silver and navy shades, and Victorian chandeliers have been selected to create a sexy and energetic environment.

With Cody’s Bistro and Bar having already established its neighborhood, blues, prohibition theme and sophisticated audience, Elevates target market will be the Millennial crowd, 21 and up.

The distance between the two locations is a mere 3.5 miles apart. When asked, “With such close proximity do you think it will divide sales between locations?

Couch replied, “No, this will be a totally different crowd. We wanted to offer a rise above the mediocrity of San Marcos bars.”

Ever focused on the details, Elevate will also feature a creative menu of ceviche cocktails, rillettes, pickled charcuterie trays, dried sausages, interactive appetizers, croissant sandwiches on top of an all you can eat brunch and mimosa bar on Sunday’s.

As Cody’s already offers crafted custom menus for prixe fix Holiday occasions, Elevate as well. With an emphasis on happy hour, small spontaneous bites, and even a menu of cocktails in shot form, Elevate is not only taking a night out to the next level, but clearly stepping outside the box from your average bar and restaurant.

A staff of five bartenders, a host of tablet toting cocktail servers for fast paced service, an energetic DJ spinning an eclectic library of music ranging from 80’s, 90’s, and 2000’s to today’s top 40 Elevates focus is energy, entertainment, and atmosphere.

With time and space for rent for business meetings and lunch celebrations, Elevate will also be a quick break for the working professionals from the Government Center and surrounding offices on the day to day. The venue will also offer personal TV’s on standby just for you to catch any game or tournament while perhaps enjoying Sunday brunch and a mimosa or craft beer.

Elevates Grand Opening is currently estimated for the middle of June 2016.
