Sweet Potato & Black Bean Hash

Yields 4 Servings
Ingredients:
- 4 Tbsp. olive oil
- 3 cups diced sweet potatoes (about 2 large potatoes)
- 1/2 large yellow onion, chopped
- 1 red bell pepper, chopped
- 1/2 Tbsp. paprika
- 1 tsp. cumin
- 2 cups fresh spinach
- 1 can (15 oz.) black beans
- Salt and pepper to taste
Optional toppings: avocado, fried egg
Optional lean meat protein to add: turkey bacon
Directions:
- Heat olive oil on medium in a large pan.
- Add sweet potatoes, onion, salt, pepper, paprika, and cumin. Cook for 10 minutes, stirring occasionally.
- Add spinach and cook for an additional five minutes.
- Add black beans and stir until all ingredients are well-blended.
Serve with eggs and avocado or on its own.
