Vegetarian Spicy Southwest Salad with Chili Lime Dressing

Chili Lime Dressing*
Ingredients
1/3 cup nonfat Greek yogurt (may substitute 1/3 cup reduced fat sour cream)
1/3 cup light mayo
1 tsp. chili powder (may substitute 1 tsp. of taco seasoning)
Zest and juice of 1 lime
Salt and pepper
Directions
- Whisk all ingredients together until smooth.
- Cover and refrigerate until ready to use.

Southwest Salad*
Ingredients
- 2 cups mini pasta shells
- 1 cup corn
- 1/4 cup green onions, diced
- 1/2 cup black beans
- 1/3 cup parmesan cheese
- 1 whole jalapeno, seeded and finely diced
- 2 Tbsp. fresh parsley, chopped
- 2 Tbsp.+ fresh cilantro, chopped
Directions
- Cook pasta according to directions (about 8-10 minutes).
- Drain pasta, rinse with cool water; then drain pasta again.
- Blend three tablespoons of chili lime dressing into the pasta. Place in the fridge to cool completely.
- When pasta is cool, stir in corn, green onions, black beans, cheese, jalapeno, cilantro, and parsley.
- Add more dressing, chili powder, or any other toppings you like!
