Vegetarian Spicy Southwest Salad with Chili Lime Dressing

Chili Lime Dressing*

Ingredients

1/3 cup nonfat Greek yogurt (may substitute 1/3 cup reduced fat sour cream)

1/3 cup light mayo

1 tsp. chili powder (may substitute 1 tsp. of taco seasoning)

Zest and juice of 1 lime

Salt and pepper

Directions

  1. Whisk all ingredients together until smooth.
  2. Cover and refrigerate until ready to use.

Southwest Salad*

Ingredients

  • 2 cups mini pasta shells 
  • 1 cup corn
  • 1/4 cup green onions, diced
  • 1/2 cup black beans
  • 1/3 cup parmesan cheese
  • 1 whole jalapeno, seeded and finely diced
  • 2 Tbsp. fresh parsley, chopped
  • 2 Tbsp.+ fresh cilantro, chopped

 

Directions

  1. Cook pasta according to directions (about 8-10 minutes).
  2. Drain pasta, rinse with cool water; then drain pasta again.
  3. Blend three tablespoons of chili lime dressing into the pasta. Place in the fridge to cool completely.
  4. When pasta is cool, stir in corn, green onions, black beans, cheese, jalapeno, cilantro, and parsley.
  5. Add more dressing, chili powder, or any other toppings you like!
